Breakfast..."Break your night-long fast" with fruit. Choose one or two different fruits in season. Dice or slice and serve attractively on a plate or in a bowl for a good morning greeting!
Cantaloupe, honeydew melon, and watermelon make colorful and delicious drinks when blended individually.
My favorite breakfast or mid-morning snack is a green smoothie! I started to add lettuce to my smoothies years ago because I didn't feel I was getting enough greens. Happily, Victoria Boutenko's book,
"Green For Life",
confirms that this was a good idea. A green smoothie can be sweet or savory. The main ingredient is to add lots of leafy greens like the dark lettuces, kale, and occasionally chard, collards, and parsley. The list is endless. Yes, you can add vegetables to your fruit to make a delicious drink!
Here is a basic sweet green smoothie:
Place in high speed blender: 2 huge handfuls of salad greens, 3-4 bananas, 1 stalk celery, and enough clean water to blend into drinking consistency.
Occasionally I add a ½ inch to 1 inch piece of vanilla bean! Delicious!
Another option is to add one other fruit to the mix…apple, pear, mango, peach. Try to choose seasonal fruit.
